Zucchini Medley

This medley of zucchini, sweet peppers, onions and a few choice herbs, makes a great side with your protein of choice.

Our choice today will be a grilled and smoked whole chicken. I can't wait!

Serves 4.


INGREDIENTS:


1 large zucchini squash, sliced in rounds

and then cut in half

1 large red or yellow sweet pepper, sliced

1 large yellow onion, sliced into rings

2 Tbsp extra virgin olive oil

1 tsp lemon juice (or juice of 1/2 lemon)

1/2 tsp sugar

1/2 tsp Mrs Dash garlic & herb

2 cloves minced garlic

1/2 tsp crushed dry basil

1/2 tsp crushed dry oregano

A few grinds of the pepper


DIRECTIONS:


Combine all ingredients in a large bowl and mix well.


Wrap contents in a foil packet and grill for about 15-18 minutes, flipping the packet over 1/2 way through the cooking time.


Grill at medium-high heat or

Roast in oven at 400 °
