Very Berry Baked Oatmeal

I have this recipe categorized under "Breakfast", but I find it great as a "Dessert", too! Nutritious, sweet berries are bursting with flavor as it mingles with the sweet, cinnamon & nut topping! Use fresh berries or if frozen, thaw under cool running water. Serve warm from the oven, or if stored leftovers from the refrigerator are served, use as is or zap in the microwave for 15 seconds to take the chill off. 4 to 6 servings.


INGREDIENTS:


1 1/4 cups rolled oats

3 Tbsp brown sugar (I used light)

1/8 tsp salt

1 2/3 cups fat free milk (or water)

2 egg whites, beaten

1 1/4 tsp vanilla extract

1 cup strawberries, sliced in half or quartered if they're large

1 1/2 cups blueberries

OR, as an alternate, 1 diced Honeycrisp apple.


TO TOP IT OFF:


1/3 cup rolled oats

1/3 cup chopped or sliced almonds or chopped walnuts

1/3 cup brown sugar (light)

1/2 tsp cinnamon

1 Tbsp flour

2 Tbsp canola oil


DIRECTIONS:


Preheat oven to 350°

Spray an 8 x 8 pan with non-stick cooking spray on bottom and sides.


In a large bowl, combine the oats, sugar, and salt.

Combine the milk or water, beaten egg whites and vanilla, then add to oat mixture.

Thoroughly stir and combine by hand using a fork.

Pour into the pan and place the berries (or apples) on top.

Now create the topping by combining the remaining ingredients in a bowl and scatter the topping evenly over the oatmeal and berries in the pan.

Bake for 50 minutes.

Cool on a wire rack for 15 minutes before serving.

Store leftovers in the refrigerator.

Serve leftovers cold or warmed slightly in the microwave for a few seconds.


Note: I tried some alternatives, and it worked out beautifully! You can make this Vegan, using water instead of milk!

Also, apples are a great alternative. As are walnuts, instead of almonds.

Many possibilities, all taste great!
