We prefer to use lean ground turkey in our chili because it's lower in saturated fat and cholesterol than beef. You can use any ground meat you prefer and it will taste scrumptious. Serves 6.
INGREDIENTS:
1 pound lean ground turkey
1 large green pepper or 5 mini peppers
1 small to medium sized yellow onion
1 15oz. can seasoned, diced tomatoes
1 15 oz can dark red kidney beans
1 15 oz can black beans
1 15 oz. can canallini beans
4 cloves garlic, minched
2 Tbs chili powder
1 tsp paprika
2 tsp ground cumin
2 tsp light brown sugar
Ground pepper to taste
(A pinch of salt, if any)
DIRECTIONS:
In a large pot, brown the ground turkey until no longer pink over med. heat.
Add in chopped peppers, onion and minced garlic and saute until tender, about 10 minutes.
Add the 3 cans of drained beans and stir to combine. Add in tomatoes. Stir.
Add in the remaining seasonings and bring to a slow boil over medium heat.
Reduce heat to low, cover pot with lid and simmer for 25-30 minutes, stirring only occasionally and allowing the seasonings to intensify with flavor.
You may serve with garnishes and toppings such as additional diced onion, shredded cheddar cheese and/or sour cream. Enjoy!
