No butter, no eggs, no milk!
This means no animal fat, no cholesterol. This recipe is vegan. As an added bonus, you can bake a delicious chocolate cake with reduced sugar, too! Who would have thought that the Great Depression of the 1930's, would bring about healthier recipes today!
It's so moist, it doesn't need the extra calories from frosting!
INGREDIENTS:
- 1 1/2 cups all purpose flour
- 1/2 cup white sugar
- 1/3 cup cocoa powder
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/3 cup canola oil
- 1/2 cup unsweetened applesauce
- 1 cup cold water OR
**1 cup cooled, brewed coffee
** For a richer tasting chocolate cake, you can use 1 cup of coffee in place of the water.
DIRECTIONS:
Preheat oven to 350°
In a big bowl, combine the first 6 dry ingredients.
Add in remaining wet ingredients and mix with the dry ingredients using a spatula or fork, until thoroughly combined.
Pour into an 8 x 8 pan or round 9 inch pan, either one, sprayed with cooking spray like "Pam".
Bake no more than 25 to 30 minutes.
Allow the cake to thoroughly cool on a rack before cutting and serving. Store leftovers covered to keep the cake moist. Serves 8.
