Acorn squash is easy to prepare using a combination of the microwave and broiler. Ready in under 20 minutes.
Loaded with nutrients like potassium, vitamin C, B-6, magnesium, calcium, & iron. Low in calories and carbs, too.
Each 1/2 of an acorn squash constitutes one serving. Makes a great side dish!
Serves 2.
INGREDIENTS:
1 Acorn squash
2 Tbsp "I Can't Believe it's Not Butter!"
(or your favorite butter substitute)
2 Tbsp brown sugar
Dash of cinnamon
Microwave safe covered glass dish
1/4 cup water
DIRECTIONS:
To make slicing off the top stem from the squash easier, place squash on a microwave safe plate and heat on high for 3 minutes. Remove from microwave.
Slice off the stem, giving a steady flat surface to slice the squash in half.
Remove the seeds. Place squash, cut side down, in dish with the water. Cover and microwave for 10 minutes.
Handle with care. It will be hot!
Remove from microwave and set acorn squash, cut side up, on a foil-lined baking sheet.
Preheat broiler.
Meanwhile, prepare glaze, if desired.
In a small saucepan, melt a butter substitute over medium to medium-low heat. Add in brown sugar and cinnamon, stirring until sugar is dissolved for a minute or two. Remove from heat.
Brush the insides, and top rim of cut squash halves with the glaze.
Broil for 5 minutes.
Allow to cool slightly and serve.
