Superfood Smoothie

This smoothie combo not only tastes good, it's good for you!

I'll be honest, I just can't seem to consume at least 5 (1/2 cup) servings per day of fruits and veggies.

I have no problem having 2 servings of vegetables with dinner or a leafy green wrap around my turkey sandwich, but it's not enough. So, I've decided to add an 8 oz. smoothie to my breakfast lineup. Blended in our Vitamix, it makes approx 46 oz.'s total.

I use an empty 46 oz. bottle that came from V-8 to store the juice in. Keep refrigerated and use within one week.


INGREDIENTS:


1 1/2 cups cranberries

1 cup blueberries

1 cup whole stawberries

1 20 oz can pineapple chunks

(in its own juice, NOT syrup)

1 banana

1/2 bag of spinach or 2 cups packed fresh spinach

1 to 1 1/2 cups water + more if you want a thinner smoothie.


DIRECTIONS:

Begin blending in your high speed blender or Vitamix, all the ingredients, including the juice from the pineapple, adding water as needed, for about 6 to 8 minutes. When you get to the spinach, be sure to stop the blender and push the spinach down with a rubber spatula. Resume blending for another few minutes or until smooth. Pour in a container and store in the fridge up to 7 days.
