Pizza with Chicken Crust

Say goodbye to a high carb crust and enjoy lean, fresh ground chicken breast as the foundation of your pizza! Amazingly delicious! 10-12" serves 2.


INGREDIENTS:


CRUST:

1 lb fresh ground chicken breast

(from your food processor or store)

1/2 tsp fennel

1 tsp basil

1 tsp oregano

1/4 cup shredded low fat mozzarella


SAUCE: (enough for 2 pizzas)

8 oz can tomato sauce

6 oz can tomato paste

1 tsp sugar

1/2 tsp garlic powder

1 tsp crushed, dry basil

1 tsp crushed, dry oregano


TOPPINGS:

Your choice of a handful of fresh, chopped spinach, sliced onions, mushrooms, peppers, cheese, spices.


DIRECTIONS:


Preheat oven to 400°. Line a pizza pan with foil and top with parchment paper.


Mix ground chicken with the seasonings and cheese by hand. Form a ball, place in center of pizza pan and begin to flatten by hand into a 10-12 inch circle.

Place in preheated oven on center rack for 20 minutes.

Meanwhile, in a small bowl, mix all sauce ingredients together. It wlll be thick. Set aside.

Chop and slice your toppings and set aside as well.

After 20 minutes, remove "crust" from oven, spread 1/2 of the sauce on top of crust, add your favorite toppings, additional cheese and an additional sprinkling of oregano and/or red pepper flakes, sparingly, if you want to add some spicy heat. 🔥

Return to oven for an additional 10 minutes to melt the cheese. If you want the cheese to brown slightly, place under the broiler for 1 to 1 1/2 minutes max.

Watch it closely, so it doesn't burn!
