This tangy, sweet salsa tastes great over grilled pork chops, chicken, or fish. Even on the side with tortilla chips and great on top of enchiladas! Easy to make and ready in minutes. Serves 6.
INGREDIENTS:
2 mangos, sliced and diced
1 red pepper, diced or **
1/2 of a large red or yellow onion, diced
Juice of 1 lime
1-2 Tbsp fresh cilantro, chopped fine
A few grinds of the pepper mill
A small pinch of salt
** optional diced pineapple
DIRECTIONS:
Combine all ingredients.
Mix and toss thoroughly.
Allow to rest for 15 minutes before serving.
If serving later, refrigerate. Once you decide to serve, allow to sit at room temperature for 15 minutes with a quick stir before serving. Enjoy!
