Serves 8.
INGREDIENTS:
1 15oz can pumpkin
1/4 cup sugar
1 1/2 cups fat free milk
2 egg whites, beaten
1/4 tsp salt
1 1/2 tsp cinnamon
1/2 tsp allspice
1 Tbsp cornstarch
1 ready made graham cracker crust
DIRECTIONS:
Preheat oven to 425°.
In a large bowl, stir the pumpkin and sugar together thoroughly.
Add in the beaten egg whites and gradually stir in the milk.
Add in the salt, spices, and cornstarch.
Continue to stir, until all ingredients are thoroughly combined.
Pour into crust. It will fill to the very top.
Carefully place on the middle rack in the preheated oven.
Bake for 15 minutes.
Reduce oven temperature to 350° and continue to bake for 40 minutes.
Remove from oven and place on a cooling rack for about 2 hours before serving.
Put leftovers, covered, in the refrigerator.
Lots of yum, a lot fewer calories!
