Creamy Coleslaw

A great make ahead side to go with BBQ pulled pork or any summer pot luck party. You can shred your own green and red cabbages, along with carrots or buy a bag of preshredded mix. I prefer the quick, no fuss method of the preshredded mix. One 14 oz bag is enough for 6-8 servings. Buy 2 bags to feed 12-16, 3 bags for 18-24 servings.


INGREDIENTS:


1 net wt 14 oz bag tri color coleslaw mix

----Dressing----

1/2 cup mayonnaise

2 Tbsp dill pickle juice

1/2 Tbsp apple cider vinegar

2 tsps sugar

1/2 tsp celery seed

A few grinds of the pepper mill

1/4 tsp salt


DIRECTIONS:


In a large bowl, whisk the dressing ingredients together, then thoroughly mix in the coleslaw, tossing and mixing to fully incorporate the dressing with the slaw.


Cover tightly and refrigerate overnight for best flavor.

Remix before serving, adding a spoonful of mayo, if needed.
