Chocolate Pudding

Homemade pudding is far better than the store bought variety from a box or premade in a plastic cup. It's so EASY to make, you'll wonder why you didn't make it sooner! I used fat-free milk, reduced sugar compared to other recipes, and a handful of dark chocolate chips is optional. Enjoy!


INGREDIENTS:

- 1/4 Cup white granulated sugar

- 1/3 Cup cocoa powder

- 3 Tbsp cornstarch

- 1/8 tsp salt

- 2 1/2 Cups fat-free milk

- 1 1/2 tsp vanilla extract

- A handful of dark chocolate chips

(just under a 1/4 cup - optional)


DIRECTIONS:

- Mix the first 4 dry ingredients in a medium sized saucepan

- Begin to heat on medium and add

milk slowly while stirring almost

constantly

- The pudding should begin to

thicken in about 10 minutes

- Remove from heat and stir in

vanilla extract and optional

chocolate chips until melted

- Divide into 4 small dessert bowls

and chill for about 2 hours
