Chocolate Covered Strawberries

When it's strawberry season, there's more than one way to enjoy them. Perhaps you like them in my Very Berry Oatmeal Bake, in your cereal, or just plain on their own...OR, even smothered in chocolate! Be it Milk chocolate, semi-sweet, or dark, they are easy to prepare in a matter of minutes. Make as many or as few as you want.


INGREDIENTS:


1/2 lb (about 6 strawberries)

6 lollipop sticks or scewers

12 oz bag of chocolate chips (any flavor)

Flat tray or cookie sheet lined

with parchment paper


DIRECTIONS:


Rinse and dry your berries on paper towels.


Pierce the tops of the berries with your scewers, pushing them 3/4 of the way.


Starting with about 1/2 the bag of chocolate chips, place in a small cereal-sized bowl and microwave on high, stopping and stirring every 15 seconds, until smooth and completely melted. Mine took a total of 1 minute.


Grab a berry from the stick end and dip, twirl or swirl, in the melted chocolate.


Immediately place on parchment-lined tray. Repeat with each berry. Place tray in the refrigerator to create a hardened chocolate shell on the berries.


Note: if you want to make more, do so in these small batches, so the melted chocolate stays smooth from the 1st berry to the last.
