Delicious and nutritious, all in one bite! Great for breakfast on the go or as a snack. I'm sure you'll enjoy making them and eating them, too!
INGREDIENTS:
2 cups bran flakes cereal, finely crushed in food processor
1 cup milk of choice
1 Tbsp flax meal+3 Tbsp water
or 1 egg
1/3 cup canola oil
1/4 cup white sugar
1/4 cup brown sugar
1 mashed banana
1 tsp vanilla
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1/2 cup semi sweet choc. chips
DIRECTIONS:
Preheat oven to 350°
Spray a 12 muffin tin with non-stick cooking spray, like Pam.
You will need 1 large, 1 medium and 2 small mixing bowls.
Mix the flax and water in smallest bowl and set aside to thicken. Use this as your egg replacement.
Next, in a medium bowl, combine the processed and ground bran flakes with the milk and allow to sit for 15 minutes. Stir every few minutes.
Meanwhile, in a large bowl, mix the oil, sugars, vanilla, "flax egg" (or 1 egg), and mashed banana.
In the other small bowl, thoroughly combine the flour, baking soda, baking powder, and salt.
After 15 minutes, it's time to combine all the ingredients.
Add the bran flakes and milk combo to the largest bowl with the oil/sugar/vanilla/egg/banana.
Stir thoroughly. Now add in the small bowl of flour/baking soda/powder/salt.
Be sure to thoroughly stir and combine ingredients. Batter will be somewhat thick.
Last, stir in optional chocolate chips.
Fill the 12 wells of the prepared muffin tin to nearly full or about 2/3's each.
Bake for 25 minutes.
Remove from oven, and allow to cool on a wire rack for 10 minutes
before removing from the muffin tin.
Makes 12 muffins. Cover and refrigerate for up to 5 days.
Can be warmed in the microwave for 15 seconds or less. Enjoy!
