Banana Nut Bread - Vegan

No butter, milk or eggs. Reduced sugar, too! A healthier version of Banana Nut Bread is here! I recently learned that Nestle has Vegan Chocolate Chips, so you can add those in as well. Makes one 9 x 5 loaf. Enjoy!


INGREDIENTS:


1 1/2 Cups all purpose flour

1 tsp baking soda

1 tsp baking powder

1/4 Cup brown sugar, packed

1/4 cup chopped walnuts

1/4 vegan chocolate chips, optional

2 Tbsp flax meal mixed w/6 Tbsp water

2 ripe bananas mashed in large bowl

1 tsp white distilled vinegar

1 tsp vanilla extract

1 1/2 Tbsp canola oil

1/3 Cup unsweetened applesauce


DIRECTIONS:


Preheat oven to 350°

Spray 9 x 5 loaf pan with non-stick cooking spray.


Combine all the dry ingredients in a large bowl.

Combine flax meal with water in a small bowl or measuring cup and set aside.


Combine the remaining wet ingredients in the large bowl with the mashed bananas. Mix well by hand.


Now, carefully combine the wet ingredients into the dry ingredients.

With a fork or rubber spatula, mix all the ingredients by hand until thoroughly combined and moistened. Batter will be slightly stiff. Pour into the prepared loaf pan and bake 45 to 50 minutes, or until a toothpick inserted in the center, comes out clean. Cover with foil during the last 5 minutes of baking if it's browning too quickly.


Cool in the pan on a rack for 10 minutes.

Remove from pan to a plate.


Cut and serve while warm or cover with foil or parchment paper and enjoy with more intense flavors the next day.

Honestly, I can never wait that long!
