Baked Zucchini Tots

A healthy alternative to potato tots, these zucchini tots are baked, not fried, and offer a great nutritious snack or appetizer.


INGREDIENTS:


2 grated zucchinis = 1 cup packed

1 large beaten egg

1/4 of a finely chopped yellow onion

1/2 cup finely shredded cheddar

1/2 cup Panko crumbs

1 tsp Italian seasoning

1/4 tsp Mrs Dash, garlic & herb

1/4 tsp garlic powder

A pinch of salt and a few grinds of the pepper mill, to taste.


DIRECTIONS:


Preheat oven to 400°


Place parchment paper on a cookie sheet.

Grate the zucchini onto a clean, white cotton flour sack towel.

Salt lightly and allow to sit for 10 minutes to draw out the moisture.

Wrap the towel around the grated zucchini and wring out all the liquid into the kitchen sink.

This should leave you with 1 cup of packed, dry zucchini.

Place in a bowl and add the remaining ingredients, stirring thoroughly after each addition.

Use a measuring Tablespoon to form each tot and place on the parchment-lined cookie sheet.

Bake for 14 minutes, flip each tot and bake 14 minutes more.

Makes 16-18 zucchini tots.

Eat plain or use your favorite dipping sauce on the side, like Ranch Dressing or BBQ Sauce.

Delicious! Store leftovers, if any, in a covered container in the fridge. Can be reheated in the microwave for a minute or two or in a 350° oven for 15 minutes.
